The LAB
populations in the inoculated fermentations showed similar growth
profiles, ranging from 6.8 to 8.1 log CFU/mL for LP + PA, 6.6 to
7.9 log CFU/mL for LP + TD, 6.7 to 7.4 log CFU/mL for PA + TD, and
6.8 to 8.1 log CFU/mL for PL+ PA + TD. As shown in Fig. 1a, the initial
LAB population in the control (without inoculation) was lower
(3.2 log CFU/mL) than that in the inoculated fermentations that
reached similar populations (8.1 log CFU/mL) at 48 h. Regarding the
total yeast population, the fermentations inoculated with the yeast
T. delbrueckii UFLA FFT2.4 showed higher counts until 24 h than the
control and PL + PA assays (without yeast inoculation) and ranged
from approximately 6.7 log CFU/mL to 8.0 log CFU/mL.
