2. Material and methods
2.1. Food establishments characterization
The data used in this study were collected by undisguised observations
after obtaining the permission of the owners of the food
establishments to investigate and observe the practices of food
safety and food hygiene in their premises. A total of 91 food establishments
were included in the survey with 30 from Belgrade
(Serbia) and Porto (Portugal), and 31 food establishment from
Thessaloniki (Greece), from different parts of the cities. The survey
was conducted from May 2012 until December 2012. The breakdown
of establishments’ type that participated in this survey is
shown in Table 1.
