No effect was observed in humectant
free system. A protective effect on preservative destruction
was observed when xylitol or glucose were used as
humectants. Finally, an increment on destruction was
verified when the mixture of xylitol and glucose was
present. This last trend is an expression of the statistically
significant interaction between depression of aw in the
range of 0.985–0.971 and addition of 0.050 g of aspartame/
100 g of system.
