Samples of UHT milk with 1% (w/v) added glucose
(control), 1% (w/v) konjac glucomannan cellulase hydrolysate
(GMH), 1% (w/v) konjac glucomannan mannanase hydrolysate or
a mixed konjac glucomannan cellulase–mannanase hydrolysate
(1 : 1) were inoculated with 0.1 mL of 12-h-old cultures of different
probiotic bacteria.
