Acidified sodium chlorite (ASC; Alcide Corp., Redmond, WA) is a
highly effective antimicrobial that is produced by lowering the pH
(2.5–3.2) of a solution of sodium chlorite (NaClO2; SC) with any
GRAS acid (Warf, 2001). The FDA has recently approved ASC (0.5–
1.2 g L1
) for spray or dip application on various food products,
including fresh and fresh-cut produce (Code of Federal Regulations,
2000). Inatsu et al. (2005)
