In this study, we present an economically viable method on the
isolation and purification of D-mannose from palm kernel, in which
the raw material undergoes hydrolysis in acid, fermentation with
enzymes, filtration on a silica gel column, desalination by an ionexchange
resin, and crystallization in organic solvent to produce
pure D-mannose in a total yield of 48.4% (based on the weight of
the palm kernel). Influential factors of each step were investigated,
and the experimental parameters were optimized
