3.2.4. Conjugated dienes and trienes
The levels of conjugated dienes were significantly lower(p < 0.05) in samples with CSP compared to control samples (day 2). Significant differences in trienes were found after 1 day of storage (Table 2). The use of CSP significantly reduced dienes and trienes formation over storage. Sanchez-Alonso et al. (2008) found that differences in trienes formation due to antioxidant concentration increased over storage in frozen minced fish muscle treated with red grape antioxidant fibre. On the other hand, peroxide values (Fig. 1) showed significant differences when using different CSP concentrations; Marmesat, Morales, Velasco, Ruiz-Mendez, and Dobarganes (2009) indicate that conjugated dienes and trienes values perform with much lower sensitivities than PV as oxidation indicators, and in this sense, although differences between CSP samples and control were observed, they were not significant between samples with different CSP concentration.
