2. Materials and methods
2.1. Sample preparation
Mangoes (Tommy Atkins, Brazil) with an initial water content
of 87.4 ± 1.8% were purchased from a local market. Prior to drying,
the mangoes were washed and peeled, the flesh was sliced along
its long-axis into 5 mm thick slices using a stainless steel slicer.
Test samples (3 3 cm in size) were cut from the flesh slices by
a sharp knife.
2.2. Drying procedure
Mango slices were placed evenly at the bottom of a glass desiccator,
which was laid inside a domestic microwave oven
