Wheat starch was hydrolyzed with a-amylase and b-amylase to
produce BLD, and then the hydrolyzate was fractionated (ethanol
precipitation) into two fractions (F75 and F88) of different molecular
size. The SE-HPLC profiles of BLD fractions obtained as described
above (F75 and F88), are shown in Fig. 4. It was clearly observed that
the ethanol precipitation method was effective in fractionating BLD
into samples of different size. This was corresponding to the results
of previous studies
