Effect of combination of hydrocolloid, emulsifier and DFSP
Since addition of XA and PS-60 separately showed highest
improvement when compared to other hydrocolloids and emulsifiers
tried in the cakes with 100% SO, combination of 0.5% each of
XAþPS-60was tried and the results are presented in Fig. 3. Addition
of combination of XA þ PS-60 increased the specific gravity from
0.75 to 0.82 g/cc and viscosity significantly from 32,000 to 58,600 Cp
(p
