Pepper Sauce
2 tablesp. olive oil
1 large onion, chopped
2 red peppers, deseeded and cut into strips
2 yellow peppers, deseeded and cut into strips
½ red chilli, deseeded and chopped
2 cloves garlic, peeled and chopped
½ teaspoon smoked paprika
Salt and black pepper
¼ teaspoon sugar
4 fresh plum tomatoes skinned, deseeded and chopped or 1 x 400g tin chopped tomatoes
