In the present study pectinase enzyme was produced from Aspergillus niger NCIM 548 under solid state fermentation
(SSF) using agriculture residue and horticulture wastes. Sixteen substrates were screened for pectinase production of which jack
fruit waste was found to be the best substrate. The maximum yield of pectinase 39.836U/gds was obtained with jack fruit waste 10g,
particle size 152-354 μm, moisture content 70%v/w, pH 5.0, temperature 30oC, glucose 3.5%w/w, (NH)4SO4 1.0% w/w and
fermentation time72 h.
