Roti Sai Mai is a dessert that is unique to Ayutthaya. It was first made by the Muslim people in the area and continues to be a favorite dessert and souvenir from Ayutthaya. If you go to the western side of the road that encircles Ayutthaya island called Soi U-Thong you will see an abundance of stalls filled with colorful bags of green, pink, and beige strands of น้ำตาล sugar. The sugar is often flavored with green pandan leaf. The roti is made with น้ำมัน oil and แป้ง flour. Women sit outside and cook the roti crepes on black grills, often donning their Muslim hijabs. The Islamic crescent and star adorns their signs and cats prowl around their stalls. On weekends the places are packed with locals and tourists alike. It is a sweet dessert similar to cotton candy that melts in your mouth. They wrap it in a crepe which is often flavored with pandan or strawberry as well.
