The selection was carried out on a total of 11 yeast strains. The strains codified
as L9; L11; L16; L46; L178 were S. cerevisiae strains of wild origin isolated from wine
cultures yeasts, belonging to the strain bank of the Universidad de Santiago (Chile).
The strains codified as IR2, IR2*; IX; S0613; Mauri ferment (FM) are S. cerevisiae
belonging to the strain bank of Debiq (Facultad de de Biotecnologia, Faenquil-USP,
Brasil). The S. cerevisiae ATCC 9763 is a commercial strain.
