It is remarkable to note that in many cases there was an increase in bacterial count at the end of the storage period (Fig. 1). This is the case of L. paracasei IMC 502® in all the supplemented milkwith the exception of milk supplemented with 4% of oat bran. As regard SYNBIO® the supplemented milks showed a drop of the log10 total count during storage but the addition of substrates has improved the survival with respect to the control
