3.2. Phytase activity of yeasts
The highest extra-cellular phytase activity was found for K. exigua LC1 and S. bayanus LC15 (Table 1). Although with some differences, the cell-bound and intracellular phytate-degrading enzyme activity was largely distributed in all the species tested. The most active strains were S. cerevisiae LC3, LC4, and S. bayanus LC15. However, Olstorpe et al.
