The trays were individually placed in 180 × 370 mm 7 layer EVA/PVDC plastic bags; 48 a 62 μm thickness; O2 permeability of 25 cm3/m2.day (1 atm/23 °C/0% RU) and water vapor permeability of 10 g H2O m2 day (1 atm/38 °C/90% RU) (BB2800, CRYOVAC). Three treatments were performed: 1) vacuum packaging; 2) MAP containing 100% CO2; and 3) MAP constituting of 75% O2 + 25%CO2. Five volumes of gas were injected, as recommended by the manufacturer, considering the proportion between the weight of the meat package volume The packaged meat for all the treatments was refrigerated (1 ± 1 °C) for 28 days.
