growing interest initiating introduction and research work on
quinoa (Chenopodium quinoa Willd). In Asian, North and South
American countries, young quinoa leaves are ingested as vegetable,
however, like all members of the Amaranthaceae-Chenopodiaceae
plant family (e.g. spinach, chard), quinoa leaves does contain oxalates.
On the other hand, the risks associated with quinoa leaves
consumption are minimal, provided that the leaves are not eaten to excess.
