Yeast and moulds counts (YMC) were spread-plated on Rose Bengal Sodium agar (Merck, Darmstadt, Germany) and incubated first at 25 °C for 4 days under anaerobic conditions in anaerobe jars with Anerocult A (Merck, Darmstadt, Germany) and then, the following 3 days in aerobic conditions at the same temperature. Escherichia coli and total coliforms counts (TCC) were determined by pouring plates using Brilliance E. coli and Coliform agar (Oxoid, Basinstoke, UK) after incubation at 37 °C for 48 h. Values were based on a means of four replicates.
