Senevirathne et al. (2010) found that FIR showed higher antioxidant activities in citrus press-cake samples. Ax, Mayer-Miebach, Link, Schuchmann, and Schubert (2003) observed that all-trans-lycopene was degraded up to 25% when heating synthetic lycopene containing water-in-oil emulsions.
