The mass gain of the vacuum infused strawberries was calculated
from the following equation, in percent:

initial mass of the fresh strawberry.
2.6. Drip loss
The strawberries were weighed after freezing and 20 h after
thawing on an analytical balance (Precisa Instruments Ltd,
Switzerland). The drip loss was calculated from the Eq. (2):
