2.4. HPP treatment
For the pressure treatments, milk was aliquoted into small flex- ible plastic bags that were vacuum-sealed, covered by another plastic bag and sealed again, taking care to leave no air inside either of the two bags, to prevent them from breaking as a result of the pressure. HPP treatments 1, 2, and 3 consisted in processing milk at 400, 500, and 600 MPa, respectively, for 5 min in all cases.
