1. 1.Mix all the ingredients together except the rice, season with salt and pepper. With the handle of a wooden spoon, gently stir the rice into the mayonnaise mixture without crushing it, set aside.

4.Place a ring mould onto a plate and layer the salad in the mould, starting with the rice and then the avocado, then the carrot and lastly the cucumber. Press down firmly and then remove the mould very carefully.
5.Thread 2 prawns onto a skewer and rest it on top of the salad tower. Drizzle with sweet chilli sauce and serve.
