- First of all, mix the sugar with gelatin powder evenly.
- Pour coconut juice into a cooking pot…then add in the sugar-gelatin mixture
- Cook the mixture until it boils and the gelatin and sugar dissolve into the coconut juice.
- Pour 700 ml of the cooked coconut juice into glasses. Wait until they are cool to put into the fridge to make them cuddled.
- Combine coconut milk and the rest of the coconut juice. Stir well and cook over medium heat for 2 minutes.
- Let it cool at room temperature and then pour it over on the coconut jelly.
- Put the jelly back into the fridge for 1 more hour.
Now you have beautiful perfect coconut jelly!
It should be soft and not too hard but not runny
You can also garnish your jelly glass with grapes sculptured into coconut trees or dipped into chocolate on the top to make them look more like a coconut fruit etc.
