The osmotically dehydrated and CaCl2 infused purple sweet potatoes under
storage at room temperature and a low-temperature storage could able to extend
the shelf life for up to 10 days and 25 days, respectively. The low-temperature storage
could be an efficient method for storing the dehydrated potatoes, and it can be proven
by maintaining the better quality over the room temperature storage. Room
temperature storage couldn’t be able to withstand for more than 10 days due to
termination of storage studies upon the uncontrolled growth of spoilage
microorganism. Overall, the present study proved that osmotically dehydrated and
CaCl2 infused potatoes can be stored for more than 3 weeks and however, further
drying application might be useful for extending the storage life for several months.
