For all the above, the purpose of the present
research was to evaluate the bacterial growth
under some technological and physiological stress
conditions, of three halotolerant lactobacilli isolated
from Chiapas cheese (Lactobacillus plantarum, L.
pentosus and L. acidipiscis) and compared with two
commercial probiotic strains from human origin (L.
casei Shirota and L. plantarum 299v). Also, safety
of halotolerant lactobacilli from Chiapas cheese and
halotolerance of human origin Lactobacillus strains
