Biopsy samples of s.c. adipose tissue from the
mature Brahman and Hereford cows from which these
calves were derived yielded essentially identical
results (Huerta-Leidenz et al., 1993). The percentages
of all saturated fatty acids (except 14:0) were
lower, and all unsaturated fatty acids were higher, in
s.c. adipose tissue from Brahman cows than in s.c.
adipose tissue from Hereford cows. Total fatty acids
(g/100 g s.c. adipose tissue) also were lower in
Brahman cows than in Hereford cows.
