The banana variety Nanicao contains non-starch polysaccharides (NSP), such as galacturons, arabinozylans, cellulose, and hemicellulose in its cell wall, similar to those found in cereals like oats. The extracted NSP can be used as a component to promote prebiotic function and help establish a healthy immune system. The amount of NSP extracted at different levels of banana ripeness differs and the accumulation of soluble sugars during banana ripening is a factor that hinders the purification of NSP. this experiment, two extraction methods were used: liquid-solid extraction (SLE) and ultrasonic extraction using ethanol as a solvent (UAE). And evaluate the efficiency of the dissolved sugar extraction process.
