12.4% of water, total organic matter, starch, cellulose, pectin
and protein (Table 1). However, the chemical composition of
raw potato pulp from a starch factory could vary according to
the type of extraction process (Saito et al., 2006). The proximate
compositions of the potato pulp reported by Mayer and
Hillebrandt (1997) and Wang et al. (2010) are compared with
our results in Table 1. Aspergillus species use a wide variety of
substrates for growth and can switch between several different
biochemical pathways for the assimilation ofthese various
substrates (Hintz et al., 1995).
