The bound phenolic and flavonoid content of mango peel
dietary fibre was determined and is shown in Table 3. The
bound phenolic content in mango peel dietary fibre was found
to be in the range of 8.12–29.52 mg/g, while that of bound flavonoids ranged from 0.101 to 0.392 mg/g and the contentsof these compounds are more in ripe mango peel than the raw mango peel. Earlier, it was reported that extractable phenolics were
more in raw peel compared to ripe peel (Ajila & Prasada Rao,
2008). However, in case of bound phenolics it was found to be
different. It indicates that during ripening these phenolics
may be involved in cross-linking of polysaccharides making
them insoluble during ripening, thereby increasing the insoluble dietary fibre content (Table 3).
