these samples were adjusted to 2.0 immediately
at 1 h intervals for 7 h. The final concentration of the degraded C3G
in every samplewas determined by HPLC. The kinetic datawere further
analyzed with Origin 8.0 software (Microcal Inc.).
To evaluate the photostability of rH-2 encapsulated C3G, the samples
were illuminated by UV light (275 nm) from a height of 17 cm.
The degradation kinetic of the pigments was determined by measuring
the concentration of each pigment sample at 1 h intervals for 8 h with
HPLC.
The thermal degradation and photodegradation of C3G followed
first-order reaction kinetics with respect to treatment time. Apparent
first-order rate constants (k) of the three samples were calculated by
the following equation as previously reported (Sun et al., 2010)
