Pink shrimp (ama-ebi)
Amaebi is best consumed fresh and raw. The deliciously sweet, translucent flesh clings to the tongue. The shrimps are a vibrant red, but do not handle well, and when no longer fresh drop their shells and discolor. Live amaebi are crisp and succulent, but a little too fresh, that is lacking the scarlet surface color, and the intense, melt-in-the-mouth sweet sensation acquire on aging. Thus to really get the most out of amaebi, it should be left about the day before consuming.
