In this study, we demonstrated that various high pressure treatments had inhibitory effect on A. flavus growth in crushed peanuts. Peanuts can be a source of aflatoxin produced by the mold Aspergillus spp. Although high pressure treatment could not destroy aflatoxin directly, but still has the potential to reduce aflatoxin accumulation and inhibiting A. flavus growth. Although we observed aflatoxin could not destroy directly by HPP, the potential application of high pressure processing could be a pre-treatment procedure to ensure microbial safety in order to decrease the possibility of aflatoxin production,which is a good strategy for maintaining high quality of peanut
