Through physicochemical analysis and sensory test of VCB,
lipid hydrolysis can be shown to play a leading role during
lipid deterioration. AV was the most notable index for shelf
life prediction, which was different from other studies using
POV as index. The kinetics of AV followed a first-order
model, with the rate constant k, within the temperature range
from 45 to 85 °C following the Arrhenius model. Therefore,
temperature as high as 85 °C can be used in ASLT to shorten
experiment times despite the design from higher elevated
temperatures having a higher relative error in SLP.
