The redness (a* value) of the control, AA- and GSE 500 ppmcontaining
samples was highest (6.1 to 6.4) at the initiation of the
storage period (data not shown). PG-, GSE 100 ppm and GSE
300 ppm-containing samples were less than 5.5. The a* values of all
samples decreased (pb0.05) during storage by about 0.2 units
indicating that samples were becoming slightly less red. However,
this small decrease is likely of little practical significance. This
decrease was likely the result of pigment interaction with lipid
oxidation products. The b* value (yellowness) of control and AAcontaining
samples was lower (pb0.05) at month 0 than PG- and GSEcontaining
samples (data not shown). The b* value of GSE-containing
samples decreased (pb0.05) slightly during the 4 month storage
period. However, no consistent pattern of change was observed for
either antioxidant or storage time effects.
