Based on their fermentation characteristics, the
mixed cultures of S. cerevisiae and S’codes ludwigii, S. cerevisiae and Hanseniaspora isolate I,
and S. cerevisiae, S’codes ludwigii and Hanseniaspora isolate I could generate alcohol content
in the final day of fermentation to 12.0, 12.0 and 13.0%(v/v), respectively.
