Oil holding capacity
Oil holding capacity (OHC) of turmeric fiber was 3.58 g/g of fiber. It
was much lower than its WHC indicating its low affinity for oil. Since most parts of
dietary fiber are hydrophilic, it cannot retain large amount of oil. Furthermore,
extraction and size reduction can increase their surface area, porosity, and capillary
attraction, and consequently enhances the physical entrapment of oil and the
magnitude of oil holding capacity. This property is beneficial for flavor and fat
