When used in marketed probiotic products, probiotic bacteria have to fulfill a number
of basic technological requirements when used in commercial probiotic products.
Most importantly, probiotic bacteria have to be present in sufficient numbers in
the product at the date of consumption, and their properties essential for expressing
health benefits after consumption have to be maintained up to that date. In addition,
no adverse effects on taste and aroma of the product should be exerted by the probiotic
organisms.
