A study on Chenopodium rubrum (red goosefoot) cells by Dornenburg and Knorr (1993) indicated that these cells could resist high-pressure treatments at 100 MPa, but a
complete loss of cell viability occurred at 110 MPa.
However, Basak and Ramaswamy (1998) reported complete rupture of the plant cellular membranes following HPP at pressures of 200 MPa and above.
