The objective of this document is to provide general information on the microbiology of the extract and powder of coffee, coffee mixtures, surrogates and surrogate mixtures. There are some recommendations for the maintenance of good manufacturing and hygiene practices along the entire manufacturing and filling process. In addition, there is a section on the sampling plan for microbiological monitoring.
