Cellulose production from fructose by strain BRCS
was examined under the same conditions using glucose
as the substrate. In this experiment, fructose was used
instead of glucose to avoid acidification of glucose to
gluconic acid since Acetobucter does not metabolize
fructose to acid. The fermentation profile was simple compared
to that in which glucose was used as substrate, as
shown in Fig. 6. Cellulose production was associated
with cell growth. A small amount of gluconic acid was
detected during the lag phase and then gradually disappeared.
This might be attributed to glucose contained in
the CSL medium.
