5) Post-hydrolysis processes
1. The most common procedures are related to the control of
molecular size and the elimination/reduction of bitterness in the
resulting hydrolysates
- Ultrafiltration (UF): most efficient post-hydrolysis procedure to
remove residual high-molecular weight peptides and proteins
① Retention of the proteolytic enzymes in the ultrafiltration system
eliminates the need for heat inactivation procedures at the end of
their action
② Used for reducing the antigen content of hypoallergenic formulas
