The loss of folic acid in the vitamin supplement tablet was more than 2.5 times higher when extraction was done in phosphate buffer only. The tablet also contained ferrous sulphate along with folic acid. Day and Gregory (1983) reported that retention of folic acid is increased if ferrous salt is added to the food system and 10% higher retention in the iron fortified system compared to iron plus ascorbic acid when processed for 25 min at 120C. However, present study did not show any protective effect of iron as far as retention of folic acid during heating was concerned
