2.4. Retort processing
The retort utilized for the thermal processing of the samples was a SurdryModelAPR-95Rotary PilotRetort (Vizcaya, Spain). The retort was operated in the static,water-spray mode for all processing runs. The ricewas thermally processed for 28 min at 121 C, 30 psi to reach F0 values of 6. All retorted poucheswere stored at 37.7 C and 90% RH in an environmental chamber throughout the test period
