Five hundred grams of dates (without seeds) were
cut into fine pieces, soaked in 1000 ml distilled water
and thoroughly mixed in a homogenizer. The solution
was centrifuged at 5000 rpm for 30 min. The
supernatant solution was taken while the precipitates
were re-extracted twice with distilled water.
The sugar content of the collected supernatant solution
was determined as glucose by the Somogyi
method (1945).
