The positive
influence of cellulose and dextrin as coated carrier for anthocyanin
pigment may be due to its function of these carriers as an
inhibitor of polyphenol oxidase, the enzyme which hydrolyze
the anthocyanin and also, due to the strict interfering of such
carrier within the condensation reaction that usually occurs
during immobilization of anthocyanin (Colin and Peter, 1980
and El-Gharably, 2005)
