Fig. 2 shows the temperature change in apple juice, orange
juice and milk samples following PL treatments of 2, 4 and 8 s. It
shows strong linear relationships between temperature attained
and PL treatment time (r2 ¼ 0.97, 0.99 and 0.97 respectively for
apple juice, orange juice and milk) with a maximum average
temperatures recorded of 36.2, 40.6 and 40.1 C respectively for
apple juice, orange juice and milk following the longest a PL
treatment time of 8 s.
