In addition to hygiene conditions, it is the temperatures experienced along the entire chain from production to consumption which are the most important factor influencing loss of fresh-ness in products which need to be refrigerated, because temperature has a direct effect on the growth of micro-organisms. For example, the shelf life of fresh pork is reduced by approx. 30 % if the storage temperature is 4 °C rather than 2 °C.
