2.5. Odor activity values (OAVs) and aroma series
To evaluate the contribution of each aroma compound to the total odor profile, the odor activity value (OAV) was calculated by dividing the concentration of a compound by its odor threshold (OT, determined from the wine matrix) that was obtained from the literature cited in Table 2. To obtain the whole aroma profile of the wine, an aromatic series has been established by grouping the OAVs of the volatiles exhibiting similar odor descriptions (Peinado, Mauricio, & Moreno, 2006).
