Sampling and preparation of vegetables
This study was conducted during the months of January to
December 2015. One hundred and fifty five (155) vegetable samples
consisting of 50 chilli pepper, 55 eggplant, and 50 okra samples
were collected from Accra metropolis. This market is one of the
major central distribution points in Greater Accra Region for vegetables
grown in the rural areas of other regions in Ghana and even
some neighbouring countries. The samples were put in sample bags
and transported on ice to the laboratory for onward processing and
subsequent analysis. Samples were immediately homogenized,
bagged and stored in a freezer at 18 C until extraction.
